As a new owner of a 1968 V8 250 I find it a Little low
geared for driving on our Autobahn’s.
Is it a big Job to Change the dif. ratio to something that
would give it a bit longer legs??

It depends... It is only about 15 minutes more work than
rebuilding a diff without changing the ratio. OTOH it does mean
checking the pinion drop, so it means the same as rebuilding the
diff.
Doing this yourself, or taking it to a shop?

I have never had a diff apart so although I do most things
myself, I think that I would give this to an expert. If I
can find one!

It isn’t really a ‘‘Hexerei’’, but it does require a certain level
of attention.
Try and find a local Offroad club, and ask them who is good in
your area. Failing that a ZF Werkstatt.
