Ok…I give…How does one take off the sunroof in order to put
the headliner and weatherstripping on?–

if you own a MKVII … or any jag for that matter … you will need the
factory repair manual … full instructions for the removal and
replacement of the sunroof (moonroof) are there … they are available
through the usual sources … xk’s unltd … sng barratt … terry’s etc.
… don’t even pick up a screwdriver without that book …

Eric,
Remove the two screws on the lower side near the front. Then open the
sunroof slightly and push up. When the front is clear of the car roof,
slide forward until the rear comes out of its tracks.

Eric,

I assume the VII and the IX are the same. I took my sunroof out about a
year or so ago, just long enough to forget some to the details. However,
as I remember you remove the wooden trim on the two sides of the sunroof
opening (closest to the doors). You may need to also remove the front and
rear depending on the fit. This should give you access to the stainless
steel ears(?) that ride on the rails. These ears can be removed by
removing the screws holding them in. With the ears removed, the sunroof
should be able to be removed. You still need to do a bit of juggling to
remove the sunroof because of a long flat rod that slides up the center
(the rod does not need to be removed).
