My understanding of the electrical temperature sensor on the fuel rail was that it was only on convertibles to turn on the a/c compressor to cool the fuel via the fuel cooler in the rail return to the tank.

Where’d you hear that? The fuel rail sensor isn’t connected to the compressor, it’s connected to the air temp sensor for the EFI. The compressor runs whenever the engine is running on a convertible, for precisely the reason you mention.
