So the manual indicates the water pump gaskets go in dry.
I seem to want to put gasket sealant on these surfaces.
Something about the surfaces and the fluid being contained tells me there should be gasket material there.
What’s the experience here? Am I being paranoid?

If your gaskets are Gortex layered over aluminum, they should be assembled dry. If your gaskets are paper, you should send them back and insist on Gortex sandwich gaskets.
If you decide to use paper gaskets, you should use a gasket dressing such as Hylomar – as opposed to sealant – on both sides.
