I’d like to perform a fuel pressure check to determine if my non-return valve at
the fuel pump is hosed, as kitty takes about 7 seconds of cranking to start. I
can’t find this procedure documented anywhere. Is this a quick job?

The procedure is well documented in Haynes (Chapter 4 IIRC) but the
specs are for the DOHC engine. I don’t know if they also apply to
the 2.9 SOHC - but probably do.
other solutions are described in a post by John Pring in the XJ40
archives.
Don’t forget that your car does not benefit from the priming burst
from the pump every time you turn on the ignition, a nice feature
on the DOHC engines.–
